In search of a good veggie PR person…

As I have written here before, I think cabbage gets a bad rap. In fact, if cabbage were a personality I would tell it to hire a new pr team-preferably one that specializes in crisis management. You see, when you mention cabbage to most people their eyes glaze over and you know their thoughts are turning to images of waterlogged, tasteless, pale green leaves. But, cabbage can be oh, so much more! The trick- like most things- lies in the preparation!

The other day I played with cabbage, carrots and apples- all shredded and then sautéed with a little cumin, jalapeno cilantro and lime. The results were wonderful- tangy, slightly crunchy and sweet-with a little kick from the cumin, cilantro and the jalapeno. It was a fabulous side dish for fall and completely worthy of an Edgy Veggie award.

So, I urge you, live on the edge and give cabbage another chance. Think of it as a Brittney or a Lindsey…perhaps a new beginning will take? And who doesn’t love a comeback story?! Try it this way…I’m betting this edgy veggie will win you over!

Cabbage, Carrot and Apple Stir-Fry
Serves 6-8

1/2 head of cabbage, shredded
2 C (about 1 bunch) shredded carrots
1 c apple, shredded- preferably Honeycrisp
1 jalapeno, minced
2 t cumin, divided
1 t freshly ground pepper
2 1/2 t sea salt
1 1/2 t sugar
1/2 c chopped cilantro
3 T fresh lime juice
canola oil

Heat the canola oil in a large saute pan to very hot and add 1 t of the cumin, pepper and jalapeno. Saute for a minute or two. Add the cabbage, carrots and apple and saute stirring constantly until cabbage has wilted but is still al dente, 3-4 minutes. Stir in the rest of the cumin, salt and sugar and cook for 30 more seconds. Remove skillet from heat and stir in cilantro and lime juice. Serve warm, room temp or cold.
