A new obsession

I have a new food obsession. And, I cannot take credit for the creation of this one. This delicacy came courtesy of Dobbs & Bishop- my local cheese shop. My new obsession is fresh ricotta with olive oil, basil and red pepper flakes mixed in. Take my word for it- it is amazing and very versatile. It is the perfect “in a pinch” appetizer when served on crackers or crusty bread, or as a dip with crudités. And, if you have any left the next day, it is even better as a sandwich spread. It is good stuffed under the skin of a baked chicken breast or, as a fabulous replacement for butter and sour cream on a baked potato.

In terms of a recipe- there really isn’t one and that’s part of the beauty. You can make this yours according to your taste buds. You start- and this is key- with fresh, good ricotta cheese. You can find the cheese in any good cheese shop or specialty market like Whole Foods or Fairway. Place how ever much ricotta you are in the mood for in a bowl, add olive oil to moisten and give the cheese a spreadable texture, and then add the desired amount of chopped fresh basil and crushed red pepper. Mix and eat. So easy.

    Sounds fab! Can’t wait to try it a host of different ways. Am still looking forward to trying the ginger snaps topped with blue cheese. All sorts of yummy eats to look forward to.
